including some of those used in the process to create this warming caramel and toffee Baltic style porter

The fruit was then innocualted and fermented at 28 degrees with gentle pump overs during fermentation. Once primary ferment was complete, the wine was left on skins for 25 days, pressed off to tank. A small portion was racked to barrel with the balance remaining in tank to retain freshness and vibrancy. Filtered and minor fining
