They are put whole without stone into our barrels where they slowly fill with the surrounding beer and as the temperatures in the brewery increase & decrease with the seasons

After letting it rest in oak barrels to gain funky complexity

The fruit is all finesse and elegance

The fermentation is controlled by successive racking

Pale straw green, exceptionally fruit driven with a fluid line of white peach, nectarine, green apples and honeydew melon. The controlled use of seasoned oak makes this wine generous and fresh with a mouth coating nutty and slightly smoked texture of hazelnut and almonds.
