Vintage Japanese Signed Chef's Hocho Sushi 4.75" Knife Laminated Samurai Steel Metalwork Used traditionally in Chado teaThis is a fine professional grade Hocho () from sushi chef's knife from the mid to late 20th century. Made using the same methods used to create samurai swords. The blade was hand forged from a combination of hard high carbon white steel forge welded onto a piece of soft wrought iron. After forging and shaping it was set into a Magnolia wood handle. This Hocho with a heavy single sided blade used in the Japanese kitchen to prepare fish for sashimi,
