The wine was produced by Catharina Sadde, a young winemaker with one of the most impressive CVs in Burgundy, including a stint at Domaine de la Romane Conti who here directly presses the grapes, ferments the must with ambient yeats, and ages the wine for 7 months ins stainless steel tanks, with and low SO2 added at bottling.
