Its produced from 50 80 year old Gamay dAuvergne from numerous parcels grown over basalt and quartz, with a portion pressed directly, whilst whole bunches were left to infuse in the fermenting juice for four days before being pressed to stainless steel vats for a year, and bottling without filtration, finding or added sulphur. Juicy red fruits and smoky minerals make for a pleasing experience.
