1er Cru Les Fichots, 2022 image-size-test Menu PineauStunning, ethereal Pinot Noir from a cool, late ripening Premier Cru site. The wine was produced by Catharina Sadde, a young winemaker with one of the most impressive CVs in Burgundy, including a stint at Domaine de la Romane Conti who uses a mix of whole cluster and destemmed berries, ambient yeast fermentation in a mixture of barrels and stainless steel tanks, followed by 14 months in barrels, and minimum SO2 added only after malolactic fermentation
