The empty barrels were returned to The Gospel and filled with a specialty Rye Whiskey to create 'Persistence Rye - Imperial Stout Cask Finish'
In the winery we use mostly older barrels for this wine
from pasta to breaded veal
Method: Pour the beer into a saucepan and gently heat to around 60C before decanting carefully to a heavy glass or warm mug

The fruit was gently destemmed and left to develop flavour and texture from the skins before pressing to seasoned French oak barriques (225l).
