The grapes were harvested by hand on March 9th 2017 then fermented in open vats, hand plunged then pressed. Malolactic fermentation and maturation in barrel then fined with egg white prior to bottling. The wine was matured for 18 months in oak barrels, 60% of which was new French oak.
