The molasses-like aceto (6% acidity)The vineyard for this wine is located in the hilly southern Piedmont near the Ligurian border in the town of Montforte D'Alba at an altitude of 300m. Maceration on the skins takes place for about 8 days in rotating fermenters at a controlled temperature. Afterwards, the grapes are pressed and the alcoholic fermentation is completed after about 20 days in stainless steel tanks. The malolactic fermentation takes place in French barriques, 50% new and
