Nose is profound, with notes of roasted apple, chamomile, lemon curd, with a bit of sage and a salt rim. The palate is generous from an extra year with the lees in neutral barrel. Bold flavors deeply etched: Apple butter with a bit of cinnamon, before a star burst of acidity on the finish with a savory salty minerality that lingers with apples and pears on the finish.
